The "Fermentation Culture Summit in Wooden Barrels Tokyo 2026" will take place at Shibuya Hikarie (2-21-1 Shibuya, Shibuya-ku, Tokyo). This event aims to inherit and develop the culture of fermentation using traditional wooden barrels for soy sauce production, with a focus on initiatives led by young brewers.
The "Revival Project for Wooden Barrel Craftsmen," started in 2012, has been gaining support from many soy sauce breweries, chefs, and consumers, expanding the network of wooden barrel enthusiasts. In recent years, young individuals in their 20s and 30s with professional experience are returning to their family businesses to learn soy sauce making from the older generation. They are actively inheriting traditional techniques while also engaging with people from overseas and different fields to convey the charm of wooden barrels from a broader perspective.
This summit will provide an opportunity for participants to learn together about "what the next generation of brewers are seriously wanting to know today."
